Copy Cat Lofthouse Cookies

With Valentine’s Day coming up, I thought I’d whip up an easy sugar cookie to share with you guys. The main reason why I love these cookies is because they don’t require rolling and cutting like many sugar cookies. Oh, they’re delicious too. That’s another reason why I like them.

Easy sugar cookies!

If you make these you’re more than welcome to add some food coloring to the icing to jazz things up a bit. You can also eat half of the icing out of the bowl. I don’t care what you do, and I’m not here to judge.

Soft, easy-to-make sugar cookies!

Ingredients
Sugar Cookies
  • 1 cup butter softened
  • 1 1/2 cup sugar
  • 1 1/2 teaspoon vanilla
  • 1 egg
  • 2 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
Icing
  • 1/2 cup butter softened
  • 2 1/2 cup powdered sugar
  • 2 tablespoons milk
Instructions
Sugar Cookies
  1. Preheat oven to 350°.

  2. Combine flour, basking soda, and baking powder. Set aside.

  3. In a separate bowl, cream butter and sugar together until smooth.

  4. Add egg and vanilla.

  5. Blend in dry ingredients.

  6. Roll dough into 1-inch balls, slightly squishing them flat.

  7. Place on baking sheet.

  8. Bake for 8-10 minutes.

  9. Remove to wire racks to cool.

Icing
  1. Cream butter.

  2. Beat in sugar.

  3. Add milk.

  4. Add more sugar or milk to get desired consistency.

  5. I often struggle to get a good consistency with the icing (mine ends up being so runny). To get the texture you achieved in the photos you posted – how long are you beating the sugar for?

    1. I mix the icing until it’s blended. If yours is often runny it means you’re adding too much liquid. Add a little bit of liquid at a time, although I’ve never had issue with this recipe being too runny. It’s better to add liquid to make it thinner than it is to add more sugar to make it thicker.

  11. these look great. quick question about your icing, do you find it hardens or does it remain buttercream consistency rather than that of a straight up water/milk & sugar icing would? thanks!

    These look so beautiful – perfection. Just made them and mine don’t look even close. Do you take the cookies out when they are really soft? Mine are crispy. Do u pipe on icing or use a spatula?

    1. I took mine out when they were still soft but light brown on the bottom. I have to admit, I watched these closely because I didn’t want them to be too crispy. They hardened a little bit after cooling but after sitting overnight in an airtight container with the icing on them, they softened up. I piped the icing on and then smoothed it out with an angled spatula.

      Well it’s technically buttercream icing, but I guess you could use a butter substitute like margarine.

    1. Yes, I have rolled mine but refrigerated for about an hour first.

    1. No I don’t chill mine! Sounds like a baking powder may have gotten old or need more flour for your altitude.

  39. I do not like sugar cookies, but these are fabulous! I rolled them out, and I did the round ones. I’ve made these 4 times, and I’ll probably never try another recipe

  40. I’ve made these sugar cookies 4 or 5 times now and they are the best. The only thing I add is a little almond extract to the dough and the frosting because I love cookies with almond. I shared some of the last batch with two friends and both of them loved them and asked for the recipe. I’ve never really cared for sugar cookies before but this recipe will be made over and over. Thanks for the great recipe!

  42. Mine tasted good but I had to add some water to the recipe because the balls wouldn’t roll. I also made them too large. I’m new to sugar cookies so am unsure of how the dough should be. Any suggestions?

  43. These are very tasty. The frosting did not taste too good though. Straight up tasted like sweet cream cheese. So I added some vanilla and it tasted much better. The texture was perfect though.

  44. My daughter made these with gluten free flower and they were GREAT!!! That says a lot. Yum! Will definitely make again!

  46. I LOVE Lofthouse cookies. I Was so excited to see this recipe. However, these cookies are nothing like Lofthouse cookies. They are NOT soft and thick, and fluffy. They are very flat, plain ole sugar cookies. Yuck!
