Black Bean Dip
I don’t know about you, but I love any excuse to eat Mexican food and drink margaritas. Which is why I love Cinco de Mayo. And to celebrate the joyous day that is May 5th, I’m sharing a quick (like ready in 5 minutes quick) and easy black bean dip recipe.
Two years ago, when I was 25 weeks pregnant with Owen, Brad and I celebrated Cinco de Mayo by driving 4 hours roundtrip to IKEA in Cincinnati to get furniture, and other things, for Owen’s nursery. We then met some friends out for dinner at a Mexican restaurant. Apparently the air conditioning wasn’t working because it was 400 degrees inside the restaurant and my pregnant self was only able to cool off with water, instead of a tequila-ladened margarita. Pure torture.
We currently have no Cinco de Mayo plans this year, but a margarita will be involved.
- 2 15.5 ounce cans black beans, rinsed and drained
- 1 can RO*TEL with Lime and Cilantro separate liquid from tomatoes
- 2 cloves garlic minced
- 1/2 teaspoon ground cumin
- 1-1/2 teaspoons salt

Separate RO*TEL liquid from tomatoes. Place 3/4 cup RO*TEL tomatoes, black beans, garlic, cumin, salt, and 1/4 RO*TEL liquid into the bowl of a food processor. Blend until smooth. Scrape into a bowl and garnish with remaining tomatoes. Serve with tortilla chips.
