Cranberry Brie Bites

Raise your hand if you’ve had leftover cranberry sauce after your Thanksgiving feast. I’m assuming most of your hands are up because there’s always leftover cranberry sauce at all of our Thanksgiving dinners. So what do you do with all that leftover, can-shaped goodness? You make cranberry brie bites!

You all know me and how I like to make and share easy recipes. Well, these bad boys are no different from my typical recipes. Why? Because these cranberry brie bites only require 3 ingredients. They look and sound super fancy for only requiring three ingredients, no?

Here’s what you’ll need:
1 package frozen puff pastry
4 oz. brie
3/4 c. cranberry sauce

Thaw your puff pastry as directed on the packaging. Cut each sheet into 9 squares.

Preheat your oven to 375 degrees.

Place the squares into a lightly greased mini muffin tin. Add brie.

Note: load these suckers up. Don’t feel like you’re over stuffing them, because you’re not. Trust me.

Spoon cranberry sauce on top. Again, load ’em up.

Bake for 10-12 minutes or until golden brown.

Makes 18 bites.

Serve warm or at room temperature. Personally, I prefer them closer to room temperature.

These cranberry brie bites are perfect with champagne, so I grabbed a bottle of Barefoot Brut Cuvée to pair with them. Perfection!

The BEST appetizers!  Delicious and easy to make!  Only 3 ingredients!

This combination is great for a get-together the weekend following Thanksgiving. I could even see myself breaking out a can of cranberry sauce and making these for a Christmas party or New Year’s Eve.

  6. I saw these posted yesterday and actually bought all the stuff to make them at the grocery store last night since I was already there doing some shopping. They are a great little treat, but they are kind of dumb if your whole goal is to use up your cranberry sauce, and the sauce can be used on other things like turkey sandwiches if you’re really just trying to use up the leftovers. The sauce costs like $1 a can so it’s really not a big deal if it doesn’t all get eaten, but the puff pastry and brie together cost me $10. To me the whole idea of using leftovers would be to save money by not throwing away food, and spending $10 on other ingredients pretty much defeats the purpose. But if your goal is just to make a delicious treat, then they’re great. You didn’t specify what temp you cooked them at though. I agree they were better at room temperature than hot.

    1. Great, I’m so glad you liked them! I almost always have brie in our fridge this time of year so it only cost me $5 for the puff pastries. The point of this post was to show a fun way to use the leftover cranberry sauce. And funny you should mention cranberry sauce on turkey sandwiches because I shared a recipe for cranberry orange relish today, which only requires adding some mandarin oranges that cost around $1. I’m sorry if you missed where I wrote to preheat your oven to 375 degrees– it’s written under the photo of the puff pastry dough cut into 9 squares. Have a happy Thanksgiving!
