Cherry Cobbler

Ingredients

Filling

  • 3 cups cherries, thawed
  • 2 Tbsp tapioca powder
  • 1/4-1/2 cup sugar, depending on sweetness of cherries

Topping

  • 1/2 cup butter, softened
  • 1 cup self-rising flour OR mix together 1 c. all-purpose flour 1 1/4 teas. baking powder, 1/8 teas. salt
  • 1 cup sugar
  • 1 egg
  • 1 teas vanilla

Instructions

  1. Preheat oven to 350°.

  2. Place cherries in greased 2 qt. baking dish.

  3. Sprinkle 1/4-1/2 c. sugar over cherries.

  4. Sprinkle tapioca over cherries.

  5. In a medium bowl, cream butter and 1 c. sugar together.

  6. Stir in flour.

  7. Add egg and vanilla. Mix well.

  8. Spoon mixture over cherries.

  9. Bake for 35-45 minutes or until light brown on top.
